This means that we accompany the wine during the process and intervene only when we consider it necessary. We work with spontaneous fermentations and native yeasts, adapting the production to each wine.

In the case of IGIGA, the Xarel·lo ferments in contact with the skins for 18 days. This contact is part of its production and provides structure and personality to the wine.

This is the method we use to make SIRENI. The wine is bottled before fermentation is complete so that it ends inside the bottle, thus generating carbonation.
